The Silo Cookhouse is thrilled to welcome Brett Suess as our new Chef de Cuisine. A Western North Carolina native with a deep-rooted passion for Appalachian and open-fire cuisine, Brettβs journey has been as unique as his approach to cooking. From studying photography at Appalachian State University to discovering his love for the culinary arts in San Diego, Brettβs path led him back to the mountains he calls homeWith years of experience in Ashevilleβs renowned food scene and a James Beard Award semifinalist honor under his belt, Brett brings a creative, locally-inspired approach to his cooking. At The Silo Cookhouse, heβs excited to craft menus that celebrate the regionβs natural bounty while fostering innovation and community.
